Apple Spice Pancakes
Fall into the season with a perfect blend of sweet and spice to get your day started.
These healthy Apple Spice pancakes are a cozy treat the whole family will love.
WHAT YOU NEED:
PANCAKES
- 1/2 cup (1 packet) Apple Spice Smoothie
- 1 very ripe banana
- 3/4 cup milk of choice
- 1 tbsp maple syrup
- 1 tsp coconut oil
- 1 cup flour (all-purpose or gluten-free/almond)
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
APPLE COMPOTE
- 1 apple, diced
- 1 tbsp coconut oil
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- 1 tsp cinnamon
TOPPINGS (optional)
- Maple syrup
- Whip cream
- Butter
HOW TO:
PANCAKES:
- In a bowl, mash the peeled banana and add the milk, maple syrup, and coconut oil. Give it a quick whisk.
- Mix in the Realm, flour, and baking powder. Let the batter sit a few minutes.
- Spray a flat pan or griddle with oil and heat it to medium-low. Add a 1/4 cup of pancake batter. Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula. Cook on the other side until done. Repeat for all the pancakes.
- Stack pancakes and top with warm apple compote and toppings of choice.
Yield: 8 pancakes
COMPOTE:
- Add all ingredients to the saucepan and sauté over medium heat until the apples are tender and the juices are thickened to a thin syrup, 10 to 12 minutes.
